Make sense, but if there was a way to control both blades, they wielder would be hard to defeat.

Yes, but it takes far more time and effort to control two blades. This is why only a few ever do. It is stated in Knights of the Old Republic that holding 2 lightsabers and/or weilding a double-bladed lightsaber will make it harder to control.

Again your logic is undenyable, the would be harder to control. However it would have been neat if they came up with a shield of some sort for jedi.

Yeah, but they have lightsabers AND the force at their disposal. Using both at the same time makes them almost invincible. But yeah, I know what you mean.

Forgetful me; I completely forgot they can use the force. With that being said than perhaps a lightsaber is all they would need as a material weaplon.

That's what I believe. I think of it as this:
If Jedi could use the Force, then while they were fighting, they would use the Force to sense where their opponents next move would end up, and at the same time use the Force to move their arms (while holding the lightsaber) to a position where they would be able to block their opponents attack.
That's why Obi-Wan defeated General Grievous in lightsaber combat. It was harder for him in hand-to-hand combat (wonder why?)

Not at all. General Grievous is cybernetic and in being so does not have access to the force.

Well, Anakin could use the Force with his mechanical arm. It's just that Grievous never could touch the Force. But, since he never could touch the Force, his attacks weren't as spot-on.

It't true that Anakin did have a mechanical arm but he still would have the force at his command because most of him is still organic. Grievous on the other hand was barely 10% organic.

Yes, but when Anakin was Darth Vader he was mostly machine, and he could still use the Force. Grievous never could use the Force, ever.
